My mom always like to homemake traditional kueh-mueh especially when I was a little kid and one of them is kueh pau. Nowadays it`s quite hard to find them sold at foodstalls except these "Pau Nusantara" which were placed in a nicely racked glass cabinets and famous for its varieties of fillings. I don`t quite like the taste of the flour mixture. For those who had tasted it must agree with me. The texture is soft indeed but the traditional taste is no longer there.
Ok, let me share with you this simple recipe of our traditional steamed kueh pau with coconut filling and chicken filling. The kueh pau that I used to know in the old days only had coconut filling. Nowadays, you just name it..various kinds of filling are available..chicken, beef, red beans, green beans, coconuts, cream custard, cream corns, sekaya etc. The choice is yours...
Here we go...


PAU KUKUS TRADISIONAL
Bahan-bahan:
1 kg tepung gandum
11gm yis mauripan (=I packet)
200gm gula (=1 cwn)
100gm minyak jagung atau minyak masak (=1/2 cwn)
460gm air (=2 1/2 cwn air, boleh tambah jika perlu)

Cara-cara:
1. Gaul tepung dengan yis.
2. Larutkan gula dalam air.
3. Tuangkan larutan gula sedikit demi sedikit ke dalam tepung dan gaul perlahan-lahan dengan hujung jari.
4. Halfway thru campurkan minyak dan teruskan menguli dgn menghabiskan lebihan air hingga menjadi doh yang kenyal.
5. Rehatkan adunan 10min - 15min.
6. Bulatkan adunan mengikut saiz yg dikehendaki dan rehatkan lagi 10min. Sementara itu panaskan kukusan.
7. Leperkan doh bulat di atas tapak tangan dan masukkan inti kesukaan dan tutup rapat2 dgn menarik bhg yg dirapatkan itu ke arah bawah dan dapatkan permukaan atas yg licin dan bulat.
8. Lapik dengan daun pisang atau plastik yg telah digunting mengikut saiz pau.
9. Biarkan pau naik selama 30min dan kukus selama 10min. Jangan lebih lama dari itu.
* Pau yg telah sejuk boleh dihangatkan semula menggunakan kukusan.

I only used half of the whole ingredients and they made a dozen of kueh pau. 6 of them with coconut filling and the other 6 with chicken filling..I still prefer the sweet filling when it comes to kueh pau tp makan jugak laa yg savoury tu sama. To tell you the truth all paus finished in no minutes during breakfast..and the next day I asked if the kidz want some more..OOOOooh YES..!!!!. I made another dozen. Hmmm...everything was because my MIL introduced the paus that were sold by a young man by the street at the town she lives in. She is also well aware of the Pau Nusantara which are no longer traditional and that`s why she claimed that this man`s paus were nice and he really sells. When my MIL brought us there she requested for 10 but only got the last 4..That`s why I made paus when she came over the next day just to please her.. ..And I`m glad she liked it

7.zabariahhassan : Ni pun kes dah lama tak buat lah ni. Bila mertua sebut ada org jual kat tepi jln kat umah dia dan selalu tak sempat nak beli..makanya bila dia dtg ke rumah kakrinn pun buatlaaaaaaah..

12.Hajar : Heh heh ..tak perasan pun mamafami pun buat pau..sat pi tengok ...OOOooooo iyaa..tapi inti kacang merah. Tengok bahan2 bnyk gak yg tak serupa...nampak moden sikit. Tapi nama tetap PAU!!!
13.Ana : Tu lah Ana..resipi turun temurun ni elok kita simpan elok2. Skrng ni bnyk resipi yg dah moden..tu yg hilang segala rasa originalnya..Ana pun tak suka pau nusantara ekkk
14.dR ali : Resipi orang lama dR ali oiiiiii.....resipi ni pun pakai minyak jagung gak tapi guna minyak masak biasa pun boleh juga...Untuk ada orang rumah boleh masak mcm2 ya..
15.Ida Isk : Ida nak tau, rinn dah 3 kali buat ni sejak kali pertama rinn buat entry ni. Tukar2 la dia punya inti. Kalau ida buat sekali mesti nak buat lagi.. sebab ida kan rajin mempelbagaikan resipi..
16.jeff : Setuju tu Kalau beli di luar jarang dapat yg sedap dan inti pun lokek. Kalau buat sendiri jeff boleh sumbat ikut selera & bnyk mana pun. Jangan sampai tak leh katup doh tu uuuudahlah..
17.Sabrina : Ha ah Sab. Kakrinn kalau apa-apa pun mmg suka yg resipi original/asal..inti kelapa tu sudah termaktub feveret kakrinn. Mcm KFC pun..suka yg ori, yg spicy tak suka. Kueh2 lain pun sama..suka yg asal dan asli..Kalau dah ditokoktambah mcm2 akan hilanglah keasliannya..sesekali takpe laah..
