BASIC BAKED CHEESE CAKE

Basic Baked Cheesecake
I always like Japanese Souffle Cheesecake and would like to recommend it a friend but this cyber friend of mine requested a simple cheesecake recipe for her to try. Hmmm...okey, I guess this one will do to fulfill her wish. Madam Raihan..this is for you....

BASIC BAKED CHEESECAKE

Ingredients:

For the pie crust
25 pcs Marie Biscuits or any other digestive biscuits, crushed or dry blended
1/4 cups margarine, melted ( Boleh cairkan guna microwave, 40sec on HIGH)

* Combine both and press on to baking tray. If you are using a spring foam baking tray it`ll be easier to take out but if you are using a normal baking tray, pls line it with grease proof paper. Easier to invert it out of tray.
* Do not press crust mixture too hard or else you`ll find it difficult to cut the cake later on.
* Refrigerate the crust while we prepare the cheese filling.

For the cheese filling
2 packages (250gm each) philadelphia cream cheese, softened
1/2 cup caster sugar
1/2 tspn vanilla essence
2 eggs
1 tblspn lemon juice(optional)

Method:
1. Beat cream cheese and sugar with electric mixture on medium speed until well blended. Add vanilla essence.
2. Add eggs and mix just until blended. Do not overmix.
3. Pour into crust.
4. Bake in a pre-heated oven at 170 deg celcius for 30mins-40mins or until centre of cake is almost set. Let cool for a while before refrigerate for 3 hrs or overnight. May be taken as it is or can be garnished as to your liking.

My kidz insisted I garnish the cake with blueberry filling.. ahhhhh these kidz...blueberry every now and then... ..BUT since I still have some kiwi filling, whipping cream and syrup jelly, I simply garnished the cake with them. My cake chilling time only took half an hour, kidz couldn`t wait...there we go enjoying the cheesecake. Sorry le Auntie Raihan..we had to do this even though this entry is specially dedicated for you..We ate them on your behalf...

I actually only used half of the ingredients since I only had 1 block of cream cheese left. So, instead of using a 9" baking tray I used my 6" springfoam tray. Chomeeiiii jer kek tuuu...But the taste remains the same. For those who have never tried to make one..this could be a great opportunity to start off with. I always believe whenever you wanna do sth new..do it from basic..then slowly increase your ability by trying a little more challenging one. Orait...enjoy your day
