ALMOND BISCOTTI

Almond Biscotti @ RinnChan`s

When I wuz young and didn` t have much, I used to eat Roti Kering for my breakfast or teatime. Even tastier if dipped in hot dark coffee...hmmm..during that time we didn`t have instant coffee..not to mention cappucino, espresso or any of those at starbucks or coffee bean. Nowadays, at times I still treat myself with Roti Kering especially during my confinement periods where all you can eat is the `kering..kering` ones..
Well, as usual thru wild surfing in the net, I came accross this interesting recipe called Almond Biscotti which my dear hubby told was something like those available at starbuck. I never thought that this kind of Roti Kering have become popular now, innovatively transformed to appear more modern and served at exclusive spots!! Well, both Roti Kering and Almond Biscotti may not have any relationship in terms of cooking innovation. It`s just a mere comparison. I`ve done some browsings and found some quite interesting biscotti`s recipes. For a start, my dear hubby insisted that I try this one first... and here`s the outcome.



ALMOND BISCOTTI
Ingredients:
300gm multipurpose flour
200gm caster sugar ( I used 100gm only)
1 tspn baking powder
3 eggs
2 tspn vanilla extract ( Iused vanilla essence)
100gm whole blanched almonds (I used almond flakes)

Methods:
1. Pre-heat oven at 165 deg cel.
2. Sift flour and baking powder. Put together in a bowl with sugar.
3. Whisk eggs with vanilla essence, then stir into dry ingredients.
4. Add almonds then turn out onto a lightly floured surface.
5. Divide dough into two and shape into flat logs about 25cm by 5cm in size.
Place onto grease proof paper and onto oven tray.
6. Bake for 35mins or until lightly browned. remove and let cool slightly.
7. Use a serrated knife slice evenly to 1cm thick or less. I used my usual kitchen knife.
8. Place the slice back on tray and return to oven, bake for 10mins,
turn then over and bake for another 10mins. You are looking for slices to dry out but
barely colour. If pressed with finger, there should be resistance...(Dah jadik roti keras tuuuu..)
9. When done place them on wire rack to cool. These are definitely perfext with hot coffee....

Ingredients required are almost basics and preparing method is fairly simple...So, what are you waiting for ???

12.qassrinna : Boleh gak kot kalau cicah mushroom sup tapi kena betul2 panas baru biscotti tu boleh lembut....Mcm2 idea ekkk kalau nak makan nii...
13.Doubleukayes : Silalah mencubanya..p/s : Kalau brand new mmg mahal..tapi kalau nak buat melasak off road rasanya tak perlu beli baru, 2nd hand jer. Nak modifiy pun tak kisah kannn...Kalau baru sayaaaaang ler dek oiiii...Org muda2 ni jarang yg suka 4WD..VIOS tu pun dah cukup macho utk lelaki muda....
14.mommy_d&d : Iye ke sampai mahal sgt biscotti tuuu???..Mentang2 lah recipe Mat Salleh ekk.. Nnt kita jual roti kering kat depa pulak..baru depa tau roti kering mesia pun hebat jugak!!! Kalau dah tau mahai...buat aje sendiri...
