CINNAMON TWIST BREAD

Will vanish in a while..hurry up!!!

It`s been a while since I last kneading dough, hahaha...yesterday while I wuz doing some seiri on old magazines..heh heh heh..memang tak leh nampak..as usual I would flip thru the cooking pages and saw this beautiful cinnamon twist bread. The bread is considered basic but the incorporation of cinnamon powder to sprinkle the surface suggests the name as it is and I just thought this could be sth different in taste. Appeared in Keluarga & Seri Dewi magazine by courtesy of Chef Mohd Annuar Draman of Shah Alam, here goes the recipe....

CINNAMON TWIST BREAD


Ingredients:
400gm high protein flour
12gm instant dried yeast
1gm bread improver ( used 1/2 teaspn)
6gm salt (used 1 teaspn)
50gm egg (used 1 med size egg)
48gm caster sugar
12gm milk powder (used 2 tablespn)
60gm margarine
190gm water
1 egg yolk, to brush

To sprinkle :
Mix 1 teaspn cinnamon powder and 3 teaspn caster sugar (I used brown sugar)

Method :
1. In a large bowl mix together flour, yeast, milk powder, sugar, salt and bread improver. Mix well.
2. While mixing, add in egg and margarine consecutively.
3. Add in water little at a time making into crumble. Knead until dough is formed and not sticky.
4. Cover the dough with plastic film and let rest for 10 mins.
5. Divide dough into 8 equal small dough and round them. Proof for 5 mins. Cover with plastic again.
6. Using hand roll each small dough into a long sausage shape. Do rolling and rest 3 mins for 3 times until dough length reach about 18cm-20cm.
7. Twist the dough as the diagrams shown below and place on pre-dusted baking tray. Proof for 10 mins or until doubled the size.
8. Brush surface with egg yolk and sprinkle mixture of sugar and cinnamon powder.
9. Bake at 190 Deg Cel for 10mins - 15 mins or until golden brown.

Like I mentioned just now, the bread is basic with similar taste as other plain sweet bread..but the aroma of the cinnamon differentiate it with the rest. Just to add varieties, I sprinkle some black raisins on top, now I have plain cinnamon twist and cinnamon twist with raisins..


It`s rather fun to make breads or buns in different shapes or patterns, and the fun doubles when you see the result turn out as desired especially when you manage to bake breads with soft texture. One thing that I never dreamt of making..or should I say never dared to try before, even the simplest buns. All this was done manually, I mean manually kneading coz I believe basic things must start with manual and with a little inspiration ( Mcm orang belajo keta laa..mana ada org belajo & test keta pakai gear auto..heh heh..dah dpt lesen kalu gasaklaaa ekkk...lepaih ni bole pakai mixer kot??) but one thing is for sure, I don`t have to clean my mixer coz I didn`t use my bread kneading hooks.

Last but not least ... many have tried these popular recipes...The Mexican Buns and Apam Balik. I`m glad I got the chance to try them out too and would like to share the result of my experiments with everyone...enjoy ..

Bahan-bahan ( 8 biji bun )
Filling
100gm mentega
1/2 teaspoon vanilla essence
35gm brown sugar
Pukul mentega dgn mixer pada kelajuan sederhana selama 3 minit. Masukkan essence
& gula perang. Simpan di dalam petisejuk sehingga sedia untuk digunakan.

Topping
100gm mentega
80gm gula icing
2 telur saiz sederhana, pukul sedikit
1 sudu kecil perisa kopi (boleh diganti dgn melarutkan 2 sudu besar instant coffee
dengan 1 sudu besar air panas)
100gm tepung gandum
Putar mentega dgn mixer pada kelajauan sederhana selama 5 minit. Perlahan2 masukkan
telur & coffee flavoring. Ayakkan tepung kedalam adunan and putar lagi pada kelajuan
perlahan sehingga semua sebati. Simpan didalam petisejuk sehingga sedia utk digunakan.

Doh Roti
250gm tepung berprotin tinggi, di ayak
1 sudu kecil bread improver+ 1 sudu kecil bread softener ( optional)
10gm susu tepung
35gm gula castor
2 sudu kecil dry yeast
1/2 sudu kecil garam
112 biji telur, dipukul
125 ml air/ susu segar ( Jgn gunakan susu tepung sekiranya menggunakan susu segar).
30gm mentega
1. Gaul rata tepung, gula dan garam didalam mangkuk.
2. Masukkan yeast, bread improver & bread softener ( jika menggunakannya) dan gaul rata lagi.
3. Masukkan telur dan air/susu segar.
4. Uli adunan sehingga menjadi adunan lembut selama 10-15 minit.
5. Bahagikan dough kpd 8 biji bola kecil dan tutup dgn film cling selama 10 min.
6. Leperkan dough di atas tapak tgn & letakkan inti/filling. Tutup rapat supaya inti
tidak meleleh keluar sewaktu dibakar.
7. Susun diatas loyang pembakar yg sudah dilenser dgn mentega/minyak/tepung
dan jarakkan dlm 7.5 cm.
8. Rehatkan selama 45 min ditempat panas (warm).
9. Pipe kan topping diatas bun secara spiral bermula dari top center.
10. Bakar didlm oven yg telah dipanaskan pada suhu 170C selama 15 min atau
sehingga bun keperangan



APAM BALIK

Bahan-bahan ( 4-5 orang )
2 cawan tepung gandum
½ cawan gula
1 sudu teh soda bicarbonate
1 sudu teh baking powder
Sedikit pewarna kuning (omited)
1 biji telur
1½ cawan air
Sedikit mentega/planta untuk mengoles

Bahan tabur :
Kacang tanah yang sudah dikisar
Gula
Krim jagung

Cara-cara
1. Mesin gula bersama telur hingga kembang,
2. Masukkan soda, bicarbonate, air dan pewarna kuning. Mesin lagi hingga sebati.
3. Masukkan tepung dan mesin lagi sehingga sebati. (ADUNAN SIAP)
4. Oleskan planta di permukaan kuali & tuangkan adunan tadi ikut ketebalan anda suka,
kemudian nipiskan.
5. Biarkan seketika & sementara menunggu masak, taburkan bahan tabur di atas.
6. Apabila cukup masak, angkat dan dilipat DUA sebelum dipotong.
