PUDING KASTAD JAGUNG

Corn Custard Pudding
Dah siap dipotong...
This is just another favourite in the house. An easy peasy recipe with minimal time consumed to prepare.


Ingredients:
4 cups water
1/2 packet coconut powder ( Or thin coconut milk using the 4 cups of water)
1 1/4 cups custard powder
1/2 to 3/4 cups sugar, adjustable to your taste buds
1 cup cream style sweet corn
a pinch of salt
Screwpine leaves (Daun pandan)

Method :
1. In a large casserole, combine all ingredients and put over medium heat.
2. Stir all the way until mixture thickens and produced bubbles on the surface. Continue stirring so as not to let the mixture crumble at the bottom of casserole.
3. When mixture turns shiny add in daun pandan. Occasionally stir for another 5 minutes and you are done.
4. Pour into mould tray or mould cups of your favourite. Leave to harden at room temperature. Do not chill when hot.

After a sour and hot treat at the previous entry, today I would like to share this sweet and nice recipe I learnt from my mum long long time ago. Along the way I have come accross many recipes which carry the same name but with slightly different ingredients and method of preparing them. But among those, only a few appeared with shiny surface, soft jellyish texture and comparatively nice yellowish colour. Even me experienced quite a number of failures before I could perfectly make this pudding.
According to my mum, the trick is on the way of stirring the mixture. A continuous stirring over low-medium heat is important to ensure that the mixture won`t get crumbled at the bottom of the casserole. The custard powder must be mixed well in the water and coconut milk beforehand before heating it up. There`s a similarity with our traditional way of kacau dodol but this pudding won`t take that long to stir and we don`t need a kawah to carry out the job. However, it is advisable to use a wooden spatula.
Follow just the correct way and you`ll be delighted to see your pudding turned out the way it should be.
