RENDANG DAGING KIJANG

Set Rendang Kijang & Butter Rice
Bau daun limau purut tu pun semerbak mewangi..

Ingredients:
500gm raw deer meat(daging kijang mentah)

Blended:
2 onions (bawang besar)
3 shallots (bawang merah)
5 garlics (bawang putih)
4 stalks lemon grass (serai)
3cm galangal (lengkuas)
3cm ginger (halia)
3cm tumeric
15 pieces dried chillies

Tamarind mixture (air asam jawa)
Brown sugar (gula perang)
Dried grated coconut (kerisik)
Limau purut leaves
Tumeric leaves

Method :
1. Thinly slice the meat. Clean and drain in a sieve.
2. Stir fry blended ingredients until fragrant.
3. Add in meat and continue to stir, leave to cook with occasional stirring.
4. Once softened, add in brown sugar and salt to taste.
5. Add in tamarind mixture and stir well.
6. When about to dry add in kerisik. Keep stirring until well incorpoated.
7. Finally, to bring up aroma..add in sliced tumeric leaves and limau purut leaves. Stir just until incorporated and you are done.

For the first time in my life have I cooked this rendang kijang. My hubby and friends went off-road on their 4-wheels into one tropical forest not that I know of. A couple of days in it, I wasn`t sure how they caught it, they came out with perfectly cleaned and divided kijang meat. Quite a number of days the meat was frosted in the freezer, thinking what was best to cook so that everyone in the house wouldn`t get a weird taste of the dish. I finally decided that rendang was the best solution since it included all the ingredients that might dissolve whatever smell or taste that might come out of. Hoping for the best, the rendang was cooked as per normal.
Hmm..my expectation slipped, the meat was actually tenderer than beef or mutton, tasted just as nice and almost no smell like beef and mutton do. On top of that, it didn`t take long to soften. To eat along with, I made this simple butter rice..ala-ala nasi minyak gituuu..but with milder aroma of butter and less sticky. Enjoying rendang kijang with butter rice in the afternoon and with roti kerca the next morning..marvellous !!!

13.khairina pinkbubble_bear : Terima kasih krn rajin jenguk fp kak rinn. Kalau resipi laukpauk biasanya kak rinn guna resipi sendiri sebab lauk2 ni ikut selera masing2 kan. Tapi kalau kek/biskut & sewaktu dgnnya kenalah refer kat mana2 buku or websites sbb ia melibatkan sukatan. Kalau tak ikut sukatan, insyaAllah tak jadik..sedangkan kalau ikut sukatan/arahan pun kekadang kantoi..heh heh heh..
