CHOCOLATE CARROT SLICE

CHOCOLATE CARROT SLICE

Ingredients:
1 cup self-raising flour
1 teaspn ground cinnamon ( I used mixed spices)
3/4 cup caster sugar (I used 1/2 cup brown sugar)
1/2 cup finely grated carrot
1 cup mixed dried fruit
1/2 cup choc chips(I used mix of choc chips & choc rice)
1/3 cup desiccated coconut
2 eggs, lightly beaten
90g unsalted butter, melted

Method:
1. Pre-heat oven to moderate 180deg cel. Brush a shallow 21cm square cake tin
with butter and line the base and sides with baking paper.
2. Sift flour and ground mixed spices into a big bowl. Add sugar, carrot, mixed fruit,
choc bits and coconut and stir until just combined.
3. Add beaten eggs and melted butter. Stir until mixture is just combined.
4. Spread mixture evenly into prepared tin and smooth surface. Bake for 30 mins
or until golden brown. Cool in tin, then turn out.

To make cream cheese frosting:

Ingredients:
125gm cream cheese
30g ulsalted butter
1 1/2 cup icing sugar, sifted
1 teaspn hot water
1/3 cup chopped walnut, to sprinkle

Method:
1. Using electric beaters, beat cream cheese and butter until smooth.
2. Add icing sugar and beat for 2 mins or until mixture light and fluffy.
3. Add water, beat until combined.
4. Spread slice with frosting using a flat-bladed knife and sprinkle with some chopped
walnut. Chill for a while for easy slicing. Slice and serve.


Hi all..

Slightly a different treat this time. A little elegant huhh.. Frankly speaking I experimented this recipe purely because I was attracted to the beauty of the food photography in this cookbook "Biscuits, cookies & brownies" of PERIPLUS Step-by-step, recently bought by my dearie hubby. Upon receiving the book, quickly scanned thru (my eyes got the scanning tool hi hi hi)...the ingredients and methods of making, and this recipe just caught my eyes. Well, all ingredients seemed to be available and the method was pretty easy and simple..that I gave it a go.
Apparently, these slices are very rich. Just look at the ingredients..personally I like the coconut bits coz it gives a slight coconut candy-like taste to the whole treat. Though the carrot and chocolate taste dispersed in the mixture, occasionally you still can feel their presence. Texture wise, it`s between cake and biscuits...the best I could describe it.
The frosting is recommended by the book.. But, if you are observing your sugar or cholesterol level...you can omit this. Having the slices plain is good enough to enjoy the whole treat...it`s only you may miss the walnut crunchy taste since no nuts are included in the ingredients. . How about incorporating the walnut in the mixture?? We can try it next time around.
I can feel I`ll be experimenting more recipes from this cookbook. Till then, enjoy your cooking experiments too.
