KUIH CARA BERLAUK & KUIH CARA MANIS

 
 
 
 
 
 

Ingredients:

For the batter
2 cups multipurpose flour
2 cups water
1 cup coconut milk ( I used half packet of coconut powder)
1 egg
1 tespn salt
A little tumeric powder to colour the batter yellow
*Mix all ingredients and filter.


For the filling
1 cup minced meat
1 onion
1 clove garlic
1/2 teaspn black pepper
1 tespn curry powder
1/2 teapn tumeric powder
1/2 tblspn oyster sauce
1 tblspn chillie sauce
Salt and sugar to taste
* Stir fry as usual.


Method :
1. For the batter, mix well and filter into a jug with long nozzle for easy pouring.
2. Grease the mould with cooking oil using screwpine leave or pastry brush.
3. Pour in the batter 3/4 full into the mould not to let overflows. Put on the lid (I recommend casserole lid coz you can see thru) and wait until the batter half-cooked.
4. Put in the fried minced meat. Garnish with chillie or spring onion/celery.
5. Put on the lid and leave to cook.
6. Take them out using toothpick or fork. Serve warm.


For Kuih Cara Manis, the ingredients and method remain the same..just change the colour of batter from yellow to green by using green food colouring and a little pandan essence to bring up the aroma. Or if you want the natural flavouring and aroma, blend three pandan leaves using water from the 2 cups of water in the ingredients. Also change the filling from fried minced meat to sugar. just add in 1/2 teaspn of sugar for each kuih cara.

Hiii all ,
When I was young, my neighbour used to make this kuih cara manis and passed to us a plate of them for breakfast. When the smell lingering around in the air we can know already, definitely it was from Mak Zura`s (The name we used to address her) kitchen.
My mother never make this kuih cara though, perhaps because we never owned the mould. Yeah, no other alternative unless to have the right mould. Nowadays, we can easily buy both kuih cara from the food stalls but as everybody awares, we always complain about the little lauk they put in. Recently I bought this mould at the price of RM6.50..thinking I would one day serve the family with our very own home made kuih cara. So here there are. And since this is my first time making it, might as well I try both. I divided the mixture into two and it made around 20 each. Enjoyed very much by the family and everybody could have their own preferences..either you want it hot & spicy or you want it sweet. Me..???..I like both
