BUTTER OAT MUFFIN

One out.....
Having it with some kiwi filling
I was actually looking for a simple butter muffin recipe but finally ended up with this. The ingredients in the recipe called for bran but since I didn`t have that in stock I substituted it with instant oats...the cereals I always take when I am too lazy to make breakfast or when I made breakfast but the menu was sth that is requested by the kids..



BUTTER OAT MUFFIN

Ingredients

150gm flour
1 teaspn baking powder
50gm bran (I substituted with 50gm instant oat)
250ml evaporated milk ( I substituted with 250ml fresh milk)
25gm margarine
50gm castor sugar (I substituted with 45gm brown sugar)
1 egg (beaten slightly)
20gm black raisins (I substituted with 20gm chopped dried red cherry)
Pinch of salt

Instuctions :
1. Soak instant oats in milk for 5 minutes.
2. Sift together flour, baking powder and salt in a bowl.
3. Hand beat margarine and sugar till creamy for approximately 5 to 7 minutes.
4. Add in egg and beat, mix well.
5. Add in oat mixture.
6. Add in flour little by little in 3 batches. Mix well.
7. Add in cherry. Place batter in papercups and bake for 20 minutes at 170 deg cel.


This muffin is not that sweet due to the amount of sugar which is less in ratio to the flour but this actually brings out the taste of oats more. I personally think that if we substitute the instant oats with rolled oats the taste would be nicer.
Just to add sth to the taste I glazed some kiwi fillings on the muffins.


Anyway, having it on its own would be much better especially to those who observe their diet menu....
Why all of the sudden am I being so health-conscious?? ...I made a lot of replacements to the original ingredients too...Hmm..maybe I`ve been tooooo cheesy and buttery in my recent cookings and bakings..
